  1. Cut the mango, cherry tomatoes, cucumber, and red onion into small cubes.
  2. Mix everything together in a bowl and squeeze the juice of half a lime over it.
  3. Add fresh cilantro (finely chopped) and season with salt and pepper. Let it sit for a few minutes.
  4. Combine the scampi with a splash of olive oil and season generously with garlic powder, onion powder, paprika, salt, and pepper (add some chili flakes for heat, if desired).
  5. Cook them for 2-3 minutes per side in a hot pan until they're a nice pink color and cooked through. Set aside.
  6. Briefly warm the tacos in a dry pan, oven, or microwave until they're pliable and warm.
  7. Spread the mango-cucumber salsa on the wrap, then top with 4 warm scampi. Garnish with extra cilantro, a lime wedge, and (optional) a touch of sour cream or avocado.
